It's a great introduction to the world of food science and will allow you to think more about how you cook and what goes on in the food you eat.

Adam Yee, Food Scientist and Host of My Food Job Rocks!

"Whether you're trying to up your game as a chef or just trying to figure out whether you can eat that thing that's been in your refrigerator for weeks, this book is for you! This book has all the questions you've ever asked about food, cooking, and kitchen gear. As a food scientist, I appreciated Bryan's expertise, sense of humor, and the nerdy details. As a busy mom of two, I love how every question comes with a quick Yes/No/Maybe and a Bottom Line Kitchen Takeaway message. This book deserves a permanent spot in your kitchen as the ultimate resource for cooking and food (science)."

-Danielle Robertson Rath, Food Scientist and Best-Selling Author of "How to Get Sh*t Done When You Feel Like Sh*t" and "Are You a Monster or a Rock Star: A Guide to Energy Drinks"

This book is a very accessible read to better understand food science principle concepts without dumbing it down. As a Teaching Assistant I wish I had this book for my students in our Intro to Food Science class, as it would have better framed the concepts we taught in class and labs...Overall, a great book that would serve as an excellent reference material for the food science student or anyone looking to better understand the chemistry of food.

Sarah Engstrom, PhD Candidate in Food Science

This book is beautifully written and illustrated. It's broken down into small sections that each answer a question, making it easy to pick up and read a couple pages at any moment. The author knows how to explain science in an easy to understand manner for anyone that wants to learn about food.

AJ Taylor, PhD Student in Food Science

I worked with Bryan to plan several pieces of content for the Kerry Health and Nutrition Institute website (https://khni.kerry.com). Bryan was excellent to work with - he was very self-driven, creative in coming up with ideas, and prompt with deadlines. Most importantly, he was flexible in learning how to tailor the content for our specific audience, could make complex ideas easily understandable, and always made sure his content was 1) science-based and 2) linked with popular trends in the industry. I highly recommend working with Bryan if you get the chance!

Nathan Pratt, RD&A Scientist, Nutrition, at Kerry

I had the pleasure of working with Bryan to plan content around food science and innovation for the Kolabtree blog. Bryan's writing is engaging, well-researched and reflects his passion for his subject. He is self-motivated, creative and is able to deliver excellent content, on time. It is rare to find someone who can communicate complex scientific ideas to a general audience, and Bryan does that with impressive ease. He'd be a great asset to any team!

While working with Bryan as the editor of the Science Meets Food blog that he both contributed to as a writer and as an assistant editor, I had the privilege of witnessing his excellent communication and interpersonal skills. He was always prompt, and met or exceeded every deadline I gave to him, along with displaying excellent team work and collaborative spirit. Throughout our tenure together, Bryan displayed the unique ability to communicate complex food science topics with both clarity and personality, and while our time as colleagues is now over, I would not hesitate to work with him again in the future!
